
INGREDIENTS
For roasting peanuts:
1/2 cup peanuts
For ground paste:
1 tbsp Ginger, Garlic & Green Chili Paste
Other ingredients for kothimbir vadi:
2 cups coriander leaves
1/2 teaspoon turmeric powder
1 &1/2 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon cumin powder
½ tsp asafoetida
1 tablespoon white sesame seeds
2 ½ cup gram flour
Salt
Water for batter
1 tsp fruit salt
For frying:
3 tablespoons oil & greasing
Garnish
Fresh coconut.
METHOD
Making kothimbir vadi batter: Chop some coriander. In a pan roast some peanuts. Prepare a steamer. In a mixing bowl take gram flour and add the chopped coriander, turmeric powder, cumin powder, red chili powder, asafoetida, coriander powder, white sesame seeds and fruit salt to it. Now add, green chili + Ginger + garlic paste. Add salt and mix well. Take off the skin of the roasted peanuts and grind them. Add it to the mixture. Add oil. Add water and mix it well. Grease a plate with oil and add the batter in it. Now put the plate in a steamer for 10 to 15 minutes, once done let it cool. Heat oil in a pan, cut the steamed batter into diamond shaped pieces and shallow fry them. Turn the sides to cook from both the sides. Garnish with fresh coconut.
